Focaccia Recipe

Focaccia by Lari
(called this because it's a mixture of a couple of recipes)

1 T yeast
1/4 t sugar
3/4 c warm water

Combine in a bowl and let it sit 10 minutes or so until it foams.

Add:
1 t salt
3 c flour

Mix until smooth and elastic.

Place dough in a well greased bowl, cover with a towel and place in a warm place to rise until the dough is doubled, about 1.5 hours. Punch dough down and place on an oiled baking sheet (or I use a silpat) forming dough into an oval or a circle. Brush on OLIVE OIL generously (DO NOT USE VEGETABLE OR CANOLA OIL - IT'S NOT THE SAME!). Sprinkle with coarse ground salt and seasoning of your choice. I have used fresh rosemary, parmasean cheese, thinly sliced onion, etc. Let rise for 20-30minutes. Bake in preheated 425 degree oven for 20 minutes or until golden. Serve warm.

This is super easy and fast, and can go with any number of entrees just by changing out the seasoning.
